This cuvée is a true late harvest wine. The grapes are picked around mid-November to obtain grapes bursting with sugar.

It is both original and in keeping with the rest of the range, as this little sweet treat remains light and aromatic.

Vinification: From a plot of Marselan grapes, I wanted to try making a late harvest wine. Vinified like a traditional red wine, alcoholic fermentation is deliberately stopped to achieve a balance of 16% alcohol and 40 grams per litre of sugar. This low sugar content gives it a slight sweetness without being heavy.
Tasting notes: Dark colour. A delicious combination of dark chocolate, cherry jam and zan.
Beautifully rounded on the palate without being heavy.
Pairings: Chocolate desserts (Black Forest gateau, chocolate fondant), foie gras served with fig jam or as an aperitif (served slightly chilled).

Coming from a plot of old Merlot destined for the cooperative winery, I wanted to try to make it a late harvest. Vinified as a traditional red wine, the alcoholic fermentation is voluntarily stopped to achieve a balance of 16 % alcohol and 40 grams per liter of sugar.
This small amount of sugar makes it possible to offer a little sweetness without heaviness.

Tasting

Wine bursting aromatically on notes of fresh grapes. The mouth is well balanced with a nice sugar/acidity balance.
