“Patience and length of time”
This cuvée has taken the time to refine itself in contact with the wood and still asks to evolve. “Patience and length of time” is a wine that can now be consumed but only if it is allowed to open up a little. It can bear to be forgotten in the cellar for a few years.

Winemaking
These three grapes were harvested, vinified and made separately. The harvest is trodden and scraped. The maceration is long (about 3 weeks) in order to extract a maximum of aromas.
The winemaking (50%) is done in barrels for 12 months.
Tasting
A dark color, a deep nose with notes of zan, blackberry jam and tapenade. The mouth is full, long and velvety.
Food and wine pairings
It will go perfectly with a pig or lamb filet mignon that will have cooked for 7 hours.
