“The Safres of my childhood”

This white wine comes from the plot that overlooks the cellar. This one is planted on this famous rock called “Safre” on which we used to spend (all the children of the family) whole afternoons making slides. This place evokes for us a moment of sharing, relaxation and carelessness, it is also the goal sought through this wine.

Winemaking

The plot thanks to its proximity to the cellars is the object of all attention. The grapes were harvested by hand. The juice is extracted directly and delicately a few minutes after picking. A delicate disbursement and a controlled fermentation will guarantee the success of this vintage.

Tasting

A pale and shiny color with green highlights. An expressive and attractive nose, with notes of white flowers, yuzu and white peach. The mouth is fluid and balanced, between softness and tone.

Food and wine pairing

Saffron risotto with scallops, Carpaccio of Daurade, matured goat cheeses.
