This white wine comes from the plot overlooking the cellar. It is planted on the famous rock known as ‘Safre’, where little vegetation grows except vines and broom. A spectacular combination for the eyes and taste buds!
2024 – AOP Ventoux Blanc 75 cl
Ageing potential: 5 years
Vinification: Thanks to its proximity to the cellars, this plot receives a great deal of attention. The grapes are harvested by hand. The juice is extracted directly and delicately a few minutes after picking.
Approximately 60% of the wine is aged in new 400-litre French oak barrels for 3 months, which is a relatively short period so as not to overly influence this already complex wine.
Tasting notes: Bright golden colour.
Notes of cinnamon, peaches in syrup and mango chutney.
Very nice development on the palate.
Fresh overall!
Pairings: White meats (veal chop with chanterelle mushrooms or guinea fowl supreme with morel mushrooms), lobster with saffron cream.

Thanks to its proximity to the cellars, the plot is the object of all the attention. The grapes were harvested by hand. The juice is extracted directly and delicately a few minutes after picking. Fermentation is done in freshly made oak barrels. The aging is quite brief so as not to over-mark this already complex wine.

The reflection is slightly golden. Aromas of fresh hazelnut and mocha appear on the first nose, followed by notes of Williams pear. The mouth is full, long and elegant.
