2021 – AOP Ventoux Red
Vinification: This Syrah is harvested at full maturity to obtain perfectly golden skins and stalks.
Maceration is carried out delicately to obtain a velvety and captivating nectar. After 12 months of ageing, the two best barrels are selected and refined for the final stage of bottling.
Tasting notes: Dark colour. Initial nose of violet syrup, zan and Lagavulin. Lovely, delicate mouthfeel. Long and fresh. This bold wine can be left to age for a few years in the cellar.
Pairings: It will go perfectly with honey-roasted pork, a good mustard chicken, or lamb chops cooked on a vine stump barbecue (an inimitable flavour) with good oven-roasted baby potatoes, all drizzled with its juices. Bon appétit!
