This vintage is veritably a late harvest. The grapes are picked around mid-November to obtain a sugar-soaked grape.
It is both original and in continuity with the rest of the collection because this little sweetness remains light and aromatic.

Coming from a plot of old Merlot destined for the cooperative winery, I wanted to try to make it a late harvest. Vinified as a traditional red wine, the alcoholic fermentation is voluntarily stopped to achieve a balance of 16 % alcohol and 40 grams per liter of sugar. This small amount of sugar makes it possible to offer a little sweetness without heaviness.
Wine bursting aromatically on notes of fresh grapes. The mouth is well balanced with a nice sugar/acidity balance.
It is a perfect accompaniment to chocolate type desserts (black forest, chocolate fondant). It can also be paired with foie gras served with fig jam. And some will appreciate it at the aperitif served slightly cool.
